This is the sister cheese to Wigmore, the same cheese which has been washed giving it a slightly sticky, farmy rind taste with a peanutty flavour. A beautifully rich, gentle cheese.
Thermised is a heating process halfway between raw and pasteurised preserving more of the exciting flora that brings flavour to cheese.
