Stichelton is an old English name for the town of Stilton, and this traditional recipe revived in 2006 is made with raw milk imparting a 'liveness', with the changing seasons bringing exciting new tastes throughout the year. Using only the morning milk and giving a longer making time of 24 hours, Stitchelton can often have a more solid, beefy taste than a Stilton. This Blue deserves a good solid thick drink to match it - a port is good, but we’d recommend a vintage, the bigger the better.
