Rich and savoury, this cheese is made using the natural warmth from the milk very early in the morning. These young cheeses (sent to us between 2 and 4 weeks of age depending on how they are maturing) show vitality and openness of developing flavours in their creamy rinds, which mature to a variety of exciting colours and blooms. This makes tasting St. Jude a constant voyage of discovery.
