The order ‘sister’ of St Jude, these intensely flavourful little cheeses are akin to an Epoisses. The young St Jude’s are ‘washed’ with a brine solution to allow the distinctive rust coloured bloom to develop, increasing the complexity of flavour and allowing a further softening of the paste. At their best, you might require a spoon……!
