This cheese renews your faith in the old British Red Leicester. A full, deep cheese matured for 18 months, long enough for salt crystals to occasionally form giving a satisfying crunch. Highly recommended. The red hue comes from the natural colourant of the Annatto seed from South America and is totally flavourless. The colouring of cheeses has been taking place for centuries - an early marketing tool, bright red cheese is the perfect way to make your produce stand out against a host of cream coloured cheese.
