Full Details
Using milk from their own herd and another close by, this award winning cheese is made with rennet from the cardoon thistle. It is matured for around 21 days and that slowness allows for its full, rich flavours to develop. As the seasons change the rind is subject to different cultures lending additional colours and flavours to the cheese. Try it with our quince paste, the strong sweet fruitiness and the salty moussey texture work beautifully.
