The Ragstone that we sell are specially selected by Neal’s Yard Dairy at a young age before the bloomy-white rind has established. The silky soft exterior develops after 2-3 weeks, and the paste is a firmer, denser consistency than it’s sister Dorstone. Ideal for those who like a more traditional goaty tasting cheese.
