Crab Apple paste is made by using the whole sharp apple and set with sugar to give a bright, tart flavour that works brilliantly with hard sheep cheese like Berkswell or Corra Linn. However, it is a great accompaniment on any cheese board and brings a fruity addition to most hard cheeses.
Damson Paste has a dark and deeply fruity and tarty flavour, very rich and perfect for winter. Ideal with buttery cheeses such as Mrs Kirkham’s Milk & Creamy and Cornish Yarg, its also works brilliantly with Sinodun Hill, goat’s cheese.
We will only be stocking Damson Paste for Christmas so you can be sure it is a very special, seasonal treat.
Quince Paste which, unlike the Spanish Membrillo that uses just the juice from the quince, this traditional English recipe utilises the entire fruit, giving it a fuller robust flavour, and more texture which works particularly well with our Blue cheeses and the Manchego-like Berkswell. NB Quince Paste is currently unavailable due to low harvest this year
