Akin to a French Chaource, Finn is a delicious soft triple-cream cheese of 2 personalities - when eaten young, the extra cream added to the milk creates a cheese mild & rich, like a Delice, or crumbly Vignotte. As it fully matures, a softer, gooey breakdown appears beneath the rind, with fuller toasted walnut & mushroom flavours
