Forget what you know about Caerphilly's - this young cheese has an 'alive' taste that goes from tangy through to smooth and creamy. This cheese was orignally made by Chris Duckett on his farm following a traditional recipe from the 1920's before going on to make it full time at Westcombe's in the 90's. These cheeses are dipped in brine for 24 hours to begin their maturing, and served young, Duckett’s has the distinctive traditional edible Caerphilly rind that brings an earthy taste and texture to the eating experience.
