This cheese has only been made since 2018 so the makers and Neals Yard Dairy (who mature it) are still discovering its full potential. Each batch has exciting new flavours with textures that range from soft and juicy to drier more robust flavours. It is a cheese that has not disappointed yet and sells out very quickly.
