While working for Neal's Yard Dairy Charlie got a crash course in cheesemaking, learning on the job and subsequently creating some of our most exqusite goat's cheeses; Dorstone being just one of them. Charlie eventually moved the creamery out to Herefordshire where he has sourced the perfect milk for his cheeses and other dairy products, including cow's milk for his yogurts (see our Dairy section). Dorstone works brilliantly when crumbled over a beetroot salad.
