Full Details
This beautifully subtle, nutty cheese is a lovely addition to the gentle side of or counter with a fresh and clean taste. It is based on the French cheese Morbier and has the distinctive ash layer running through it. Originally added to stop a skin forming on the cheese made from the morning milk in readiness for the milk from the evening (it also helped regulate acidity) now it is a lovely textural addition.
