We have taken the buttery textured, rich, delicately blued Cashel Blue and partnered it with Lieutenant de Sigalas, Sauternes. This Sauternes from Bordeaux is fresh and floral with tones of white fleshed fruits. With 12 months barrel ageing it has developed complexity and depth and although sweet it is never cloying.
The smooth sweet, taste of the wine is a perfect compliment to the buttery saltiness of the Cashel Blue.
