Made with the whey from sheep's cheese making, it’s hard to believe this beautiful cheese is a by-product often discarded! Using the traditional Italian method, the whey is heated, coagulated, and then ladled into individual basket moulds to drain, before they are packed in individual, compostable eco-bags.
