Full Details

Family farm made since the 1980s and matured for at least 6 months, Berkswell is often likened to a mature Pecorino, but has a more pliant texture and a brighter citric tone. Rather than the pressing process used with Manchego, Berkswell's distinctive shape comes from the sheeps curd being moulded in traditional kitchen collanders - the distinctive dotted rind maturing to a variety of caramel hues throughout the season. Perfect accompanied by our Quince Paste.
